1 1/2 pounds rotini pasta
1 cup mayonnaise
1/4 cup sour cream
2 tablespoons apple cider vinegar
1 tablespoon Dijon mustard
2 teaspoons salt
1 teaspoon black pepper
1 teaspoon paprika
1 cup cherry tomatoes, halved
1 cup diced cucumber
1 cup diced red bell pepper
1/2 cup finely chopped red onion
1 cup frozen peas, thawed
1/2 cup shredded carrots
2 tablespoons chopped parsley

Instructions

  • Cook pasta until tender, then cool under water.
  • Chop vegetables into small, even pieces.
  • Mix mayonnaise, sour cream, vinegar, mustard, and seasoning.
  • Combine pasta and vegetables in a large bowl.
  • Add dressing and fold gently.
