Sunshine Salad is a chilled citrus dessert salad made with orange gelatin, fruit, marshmallows, and whipped topping for a soft creamy texture.

Ingredients

1 package (3 oz) orange-flavored gelatin
1 cup hot water
1 cup cold water
1 can (20 oz) crushed pineapple, drained
1 can (15 oz) mandarin oranges, drained
2 cups mini marshmallows
1 1/2 cups whipped topping
1/2 cup shredded coconut (optional)
1 teaspoon vanilla extract

Instructions

  • Dissolve gelatin in hot water in a large bowl.
  • Stir in cold water and cool slightly.
  • Add drained pineapple and mandarin oranges.
  • Fold in mini marshmallows.
  • Chill until slightly thickened.
  • Fold in whipped topping, vanilla, and coconut.
  • Refrigerate until fully set.

Notes

Drain fruit well before mixing. Chill several hours for best texture. Do not freeze.
