A refreshing summer salad featuring sweet corn, creamy avocado, and a light citrus dressing.

Ingredients

4 ears fresh corn, husked
2 ripe avocados, diced
1 cup cherry tomatoes, halved
1/3 cup finely chopped red onion
1/4 cup chopped cilantro
2 tablespoons lime juice
2 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon garlic powder
1/4 teaspoon chili flakes (optional)

Instructions

  • Boil corn for 3 to 5 minutes, then cool completely.
  • Cut kernels off the cob and place in a bowl.
  • Add diced avocado, tomatoes, onion, and cilantro.
  • In a small bowl, whisk lime juice, olive oil, and seasonings.
  • Pour dressing over salad and toss gently.
  • Let sit for 10 minutes before serving.

Notes

Use ripe but firm avocados for best texture. Add dressing just before serving for freshness.
