Layered dessert bars featuring a buttery crust, creamy custard filling, and tart rhubarb pieces.

Ingredients

1 cup flour
1/2 cup butter
1/4 cup sugar
Pinch of salt
2 cups rhubarb
3 eggs
1 1/4 cups sugar
1/4 cup flour
1/2 teaspoon vanilla
1/4 teaspoon salt
Powdered sugar

Instructions

  • Preheat oven to 350°F and prepare an 8×8 pan.
  • Mix crust ingredients and press into pan.
  • Bake crust for 12–15 minutes.
  • Whisk eggs, sugar, flour, vanilla, and salt.
  • Stir in rhubarb.
  • Pour filling over crust.
  • Bake 35–40 minutes until set.
  • Cool completely and slice.

Notes

Drain rhubarb well if frozen. Chill before cutting for clean slices.
