Orzo pasta salad combines tender pasta, crisp vegetables, feta, and a light lemon dressing for a balanced, refreshing dish that works for meals, gatherings, or make-ahead lunches.

Ingredients

1 1/2 cups dry orzo pasta
2 cups cherry tomatoes, halved
1 medium cucumber, diced
1/3 cup red onion, finely sliced
3/4 cup feta cheese, crumbled
1/4 cup fresh parsley, chopped
1/3 cup extra virgin olive oil
3 tablespoons lemon juice
1 teaspoon salt
1/2 teaspoon black pepper
1 small garlic clove, minced
1 teaspoon dried oregano

Instructions

  • Cook orzo in salted boiling water until tender, then drain and cool.
  • Prepare tomatoes, cucumber, onion, and parsley in a bowl.
  • Whisk olive oil, lemon juice, garlic, oregano, salt, and pepper.
  • Combine cooled orzo with vegetables.
  • Pour dressing over and toss gently.
  • Fold in feta cheese.
  • Rest before serving.

Notes

Add extra lemon juice for brightness or more olive oil for richness. Works well chilled.
