Ingredients

12 ounces bow tie pasta
1 cup cherry tomatoes, halved
1 cup red bell pepper, diced
1/2 cup black olives, sliced
1/3 cup red onion, finely sliced
1 cup mozzarella cheese, cubed
1/4 cup fresh parsley, chopped
1/3 cup olive oil
3 tablespoons red wine vinegar
1 teaspoon dried oregano
1 teaspoon dried basil
1 small garlic clove, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon sugar

Instructions

  • Cook pasta until firm, then cool under water.
  • Chop vegetables and cheese into small pieces.
  • Mix oil, vinegar, herbs, garlic, salt, pepper, and sugar.
  • Combine pasta, vegetables, and cheese in a bowl.
  • Add dressing and fold gently.
  • Chill before serving and stir again.

Notes

Best served chilled after resting. Add extra dressing if pasta absorbs moisture.
