Grilled Ranch Garlic Parmesan Chicken Skewers feature tender marinated chicken coated in ranch seasoning, fresh garlic, and Parmesan, grilled to juicy perfection.

Ingredients

1 1/2 pounds boneless skinless chicken breasts or thighs cut into 1 1/2 inch pieces
2 tablespoons olive oil
1 1/2 tablespoons ranch seasoning mix
3 cloves garlic minced
1 tablespoon fresh lemon juice
1/2 cup finely grated Parmesan cheese divided
Wooden or metal skewers
Optional chopped fresh parsley for garnish

Instructions

  • If using wooden skewers soak them in water for 30 minutes.

  • In a bowl whisk olive oil, ranch seasoning, minced garlic, lemon juice, and 1/4 cup Parmesan.

  • Add chicken pieces and toss until evenly coated. Cover and refrigerate 30 minutes to 2 hours.

  • Preheat grill to medium high and oil grates lightly.

  • Thread chicken onto skewers leaving small gaps between pieces.

  • Grill 10 to 12 minutes turning every few minutes until internal temperature reaches 165 degrees Fahrenheit.

  • Sprinkle remaining Parmesan over skewers during final 2 minutes of grilling.

  • Rest 5 minutes before serving. Garnish with parsley if desired.

Notes

Cut chicken into uniform pieces for even cooking. Do not overmarinate due to lemon juice. Bake at 425 degrees Fahrenheit for 18 to 20 minutes if grilling is unavailable.
