A creamy and tangy pasta salad featuring dill pickles, crispy bacon, and a rich dressing, perfect for picnics and gatherings.

3 cups rotini pasta
8 slices bacon
1 cup dill pickles, finely chopped
2 tablespoons pickle juice
3/4 cup mayonnaise
1/4 cup sour cream
1 tablespoon Dijon mustard
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup celery, finely chopped
1/4 cup red onion, finely chopped
2 tablespoons fresh dill, chopped

Instructions

  • Cook pasta in salted boiling water until tender, then drain and rinse with cold water.
  • Let pasta drain thoroughly to remove excess moisture.
  • Cook bacon until crisp, then cool and chop into small pieces.
  • In a large bowl, mix mayonnaise, sour cream, mustard, pickle juice, and seasonings until smooth.
  • Add pasta and stir gently to coat.
  • Mix in pickles, bacon, celery, and onion until evenly combined.
  • Cover and refrigerate for at least one hour.
  • Stir before serving and garnish with fresh dill.

Notes

Add bacon just before serving for extra crisp texture if desired.
