Creamy Cucumber Salad with Greek Yogurt Dressing features crisp cucumber slices tossed in a tangy, herb-filled yogurt dressing. It is a chilled, refreshing side dish that pairs well with grilled meats and light meals.

Ingredients

Scale

2 large English cucumbers, thinly sliced
1 cup plain Greek yogurt
1 tablespoon fresh lemon juice
1 tablespoon olive oil
1 clove garlic, minced
2 tablespoons fresh dill, chopped
1/4 cup thinly sliced red onion
1/2 teaspoon salt
1/4 teaspoon black pepper

Instructions

  • Slice cucumbers thinly and lightly salt them. Let rest for 15 minutes, then pat dry.

  • In a bowl, mix Greek yogurt, lemon juice, olive oil, garlic, dill, salt, and pepper until smooth.

  • Add cucumbers and red onion to the dressing.

  • Toss gently until evenly coated.

  • Refrigerate for at least 20 minutes before serving.

  • Stir lightly and garnish with extra dill if desired.

Notes

Use thick Greek yogurt for best consistency. Salting cucumbers helps prevent excess liquid. Serve chilled for optimal texture.
