Crack Corn Salad is a creamy corn side dish with cheese, bacon-style bits, and a tangy dressing. Simple, chilled, and ideal for gatherings.

Ingredients

4 cups canned corn, drained
1 cup mayonnaise
1/2 cup sour cream
1 cup shredded cheddar cheese
1/2 cup cooked bacon-style bits
1/3 cup chopped green onions
1/4 cup finely chopped red onion
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon paprika

Instructions

  • Drain corn and place in a large bowl.
  • Add green onions and red onions.
  • Mix mayonnaise, sour cream, and seasonings in a separate bowl.
  • Pour dressing over corn and mix well.
  • Add cheese and bacon-style bits. Stir gently.
  • Chill for at least 1 hour.
  • Stir before serving and adjust texture if needed.

Notes

Best served cold. Can be made a few hours ahead. Add a small amount of sour cream if mixture thickens.
