2 ripe avocados, diced

2 tablespoons olive oil

1/4 teaspoon black pepper
1 small jalapeño, finely chopped (optional)

Instructions

  • Cook corn by boiling or grilling, then cool and remove kernels.
  • Place corn, red onion, and cilantro in a bowl.
  • Whisk lime juice, olive oil, salt, and pepper together.
  • Pour dressing over corn mixture and toss gently.
  • Add diced avocado and fold carefully.
