Ingredients

1 can chickpeas, drained
1 ripe avocado, diced
1 cup cherry tomatoes, halved
½ cucumber, diced
¼ red onion, sliced
½ cup feta cheese
2 tbsp olive oil
1 tbsp lemon juice
Salt and pepper
Fresh parsley

Instructions

  • Drain and rinse chickpeas.
  • Chop vegetables and place in bowl.
  • Mix olive oil, lemon juice, salt, pepper.
  • Combine chickpeas and vegetables.
