2 cups elbow macaroni
2 cups cooked chicken breast, shredded
3/4 cup mayonnaise
1 tablespoon lemon juice
1 teaspoon mustard
1 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup celery, diced
1/3 cup carrot, grated
1/4 cup red onion, chopped
1/4 cup pickle relish
2 hard-boiled eggs, chopped
1 tablespoon parsley

Instructions

  • Cook macaroni until tender, then rinse and cool.
  • Mix mayonnaise, lemon juice, mustard, sugar, salt, and pepper.
  • Combine pasta and chicken in a large bowl.
  • Add dressing and mix evenly.
  • Fold in vegetables, eggs, and relish.
