Creamy, rich white chocolate truffles with crunchy pistachios—these elegant no-bake treats are perfect for gifting, celebrations, or everyday indulgence.
12 oz good-quality white chocolate, chopped
1/3 cup heavy cream
1 tbsp unsalted butter
1 tsp pure vanilla extract
1/2 cup finely chopped shelled pistachios (plus more for coating)
Place chopped white chocolate in a heatproof bowl.
In a small saucepan, heat cream and butter over medium heat until just simmering.
Pour hot cream mixture over chocolate. Let sit 2–3 minutes, then stir until smooth.
Stir in vanilla extract and 2 tablespoons of chopped pistachios.
Cover and chill the mixture for 1–2 hours until firm.
Scoop small portions and roll into balls.
Roll truffles in chopped pistachios to coat.
Refrigerate until ready to serve. Let sit at room temperature for 10 minutes before enjoying.
