Creamy, rich white chocolate truffles with crunchy pistachios—these elegant no-bake treats are perfect for gifting, celebrations, or everyday indulgence.

Ingredients

12 oz good-quality white chocolate, chopped
1/3 cup heavy cream
1 tbsp unsalted butter
1 tsp pure vanilla extract
1/2 cup finely chopped shelled pistachios (plus more for coating)

Instructions

  • Place chopped white chocolate in a heatproof bowl.

  • In a small saucepan, heat cream and butter over medium heat until just simmering.

  • Pour hot cream mixture over chocolate. Let sit 2–3 minutes, then stir until smooth.

  • Stir in vanilla extract and 2 tablespoons of chopped pistachios.

  • Cover and chill the mixture for 1–2 hours until firm.

  • Scoop small portions and roll into balls.

  • Roll truffles in chopped pistachios to coat.

  • Refrigerate until ready to serve. Let sit at room temperature for 10 minutes before enjoying.

Notes

Use high-quality white chocolate bars, not chips. Chill thoroughly before rolling. Store truffles in an airtight container in the fridge.
