3 cups fresh watermelon cubes
2 tablespoons honey or maple syrup
2 tablespoons fresh lime juice
3 tablespoons unflavored gelatin
Pinch of salt
Blend watermelon cubes until smooth.
Strain the puree through a fine mesh sieve to remove pulp.
Pour the watermelon juice into a saucepan and warm over low heat.
Slowly whisk in the gelatin until fully dissolved.
Add honey, lime juice, and a pinch of salt.
Stir until the mixture becomes smooth.
Remove from heat and allow the liquid to cool slightly.
Pour the mixture into silicone molds.
Refrigerate for 2 to 3 hours until firm.
