Soft, chewy, and naturally sweet, these 4-Ingredient Date Caramels are a dairy-free, no-bake treat made with Medjool dates, nut butter, coconut oil, and vanilla.
2 cups Medjool dates, pitted (about 15–18)
½ cup nut butter (cashew, almond, or peanut)
2 tbsp coconut oil, melted
1 tsp vanilla extract
Optional: pinch of sea salt, chocolate drizzle, or chopped nuts
Line a loaf or small square pan with parchment paper.
Blend all ingredients in a food processor until smooth and sticky.
Press mixture into the pan and smooth the top.
Chill for 1–2 hours until firm.
Slice into squares and store in fridge or freezer.
Use soft, fresh Medjool dates for best results.
Add sea salt for salted caramel flavor.
Store in fridge for 2 weeks or freezer for 2 months.
