Tender, protein-rich beef bites cooked in a garlic butter sauce using a slow cooker for easy weeknight dinners.
1.5 pounds beef stew meat or sirloin tips, 3 tablespoons unsalted butter, 4 cloves garlic minced, 1/2 cup beef broth, 2 tablespoons Worcestershire sauce, 1 teaspoon soy sauce, 1 teaspoon onion powder, 1/2 teaspoon black pepper, 1/2 teaspoon salt, 1 tablespoon cornstarch, 1 tablespoon cold water, 2 tablespoons fresh parsley chopped, cooked rice or mashed potatoes for serving
1. Pat beef dry, season with salt, pepper, and onion powder. 2. Optional: sear beef with 1 tablespoon butter for 2–3 minutes per side. 3. Place beef in slow cooker, add garlic, remaining butter, broth, Worcestershire, and soy sauce, stir. 4. Cook low 6–8 hours or high 3–4 hours. 5. Mix cornstarch with cold water, stir into slow cooker 20 minutes before serving, sprinkle with parsley, serve over rice or potatoes.
Optional searing adds flavor, vegetables can be added last hour, leftovers freeze up to 3 months.
