2 cups cooked white or brown rice
1 pound lean ground beef turkey or chicken
1 tablespoon olive oil
2 tablespoons taco seasoning
3 tablespoons water
1 cup shredded lettuce
1 cup diced tomatoes
1 cup canned black beans drained and rinsed
1 cup corn kernels
1 cup shredded cheddar or Monterey Jack cheese
1 avocado sliced
½ cup plain Greek yogurt or sour cream
1 lime cut into wedges

Instructions

  • Cook rice according to package directions and keep warm.

  • Brown ground meat in a skillet over medium heat.

  • Drain excess fat if needed.

  • Stir in taco seasoning and water and simmer 3 to 5 minutes.
