1 cup plain Greek yogurt (non-fat or low-fat)
2 large eggs
¼ cup light olive oil
⅓ cup erythritol or granulated stevia
1 tsp vanilla extract
1 cup all-purpose or whole wheat pastry flour
1 ½ tsp baking powder
¼ tsp salt
Zest of 1 lemon (optional)
Preheat oven to 350°F (175°C). Grease or line an 8-inch round pan.
Whisk together yogurt, eggs, oil, vanilla, and lemon zest.
In another bowl, combine flour, baking powder, salt, and sweetener.
Fold dry into wet ingredients just until combined.
Pour into pan and smooth the top.
Bake 30–35 minutes or until toothpick comes out clean.
Cool completely before slicing.
Use frozen berries, lemon juice, or almond extract for flavor variety.
Store in fridge up to 5 days.
