A fresh and flavorful Strawberry Pie with juicy berries, thickened filling, and a tender crust, perfect for summer or special occasions.

Ingredients

1 9-inch pie crust (homemade or store-bought)
4 cups fresh strawberries, hulled and halved
3/4 cup granulated sugar
3 tablespoons cornstarch
1/4 teaspoon salt
2 tablespoons water
1 teaspoon lemon juice
1 teaspoon vanilla extract
Optional: whipped cream for garnish
Optional: light apricot glaze for shine

Instructions

  • Preheat oven to 375°F. Bake pie crust 15–20 minutes until golden; cool completely.
  • In a saucepan, mix sugar, cornstarch, and salt. Gradually stir in water and cook over medium heat until thickened. Remove from heat; stir in lemon juice and vanilla extract.
  • Arrange halved strawberries in the crust. Pour filling over berries.
  • Optionally brush with apricot glaze.
  • Refrigerate for 2–3 hours to set. Slice and serve chilled with whipped cream if desired.

Notes

Use ripe strawberries for best flavor. Adjust sugar for sweetness. Avoid excess liquid from frozen berries.
