A festive Valentine’s Day pie with fresh strawberries in a sweetened, slightly thickened filling on a buttery crust, perfect for romantic celebrations.

Ingredients

1 1/4 cups all-purpose flour
1/2 teaspoon salt
1/4 cup powdered sugar
1/2 cup unsalted butter, chilled and cubed
1 large egg
1–2 tablespoons ice water
1 pound fresh strawberries, hulled and sliced
1/2 cup granulated sugar
2 tablespoons cornstarch
1 tablespoon lemon juice
1 teaspoon vanilla extract
1/4 teaspoon salt
Whipped cream for topping (optional)
Strawberry glaze or apricot jam for shine (optional)

Instructions

  • repare pie crust by combining flour, sugar, salt, and cutting in butter. Mix in egg, add ice water as needed, chill 30 minutes.
  • Preheat oven to 350°F (175°C). Roll dough, fit in pan, prick, line with parchment, bake 15 min with weights, then 10–12 min. Cool.
  • Cook half of sliced strawberries with sugar, cornstarch, lemon juice, salt until thickened, stir in vanilla, cool. Pour into baked crust.
  • Arrange remaining strawberries on top, brush with glaze if desired. Chill 1 hour before serving.

Notes

Add pastry cream layer or chocolate for extra flavor, use plant-based butter for dairy-free option, reduce sugar to taste.
