Strawberry Flower Tart Recipe with Glossy Fruit and Golden Tart Crust

A delicate French tart with flower-inspired strawberry arrangement on a crisp crust and creamy pastry filling.

1 1/4 cups all-purpose flour
1/2 cup unsalted butter, chilled and cubed
1/4 cup powdered sugar
1 large egg
1/2 teaspoon vanilla extract
Pinch of salt
2 cups whole milk
1/2 cup granulated sugar
4 large egg yolks
1/4 cup cornstarch
2 tablespoons unsalted butter
1 teaspoon vanilla extract
1 pound fresh strawberries, hulled and halved
2 tablespoons apricot jam
1 tablespoon water

Instructions

  • Prepare tart shell by combining flour, sugar, and salt. Cut in butter and mix in egg. Chill 30 minutes.
  • Preheat oven to 350°F (175°C), roll dough, fit in tart pan, prick, line with parchment, bake with weights 15 min, remove weights and bake 10–12 min. Cool.
  • Heat milk until simmering. Whisk yolks, sugar, cornstarch. Temper eggs with milk, return to saucepan, cook until thickened. Stir in butter and vanilla, chill 2 hours.
  • Spread pastry cream in cooled tart shell. Arrange strawberries in flower pattern.
  • Heat apricot jam with water, brush over strawberries. Chill 30 minutes before serving.

Notes

Use almond flour for nutty crust, lemon zest in cream for bright flavor, or edible flowers for decoration.
