Ingredients

Scale

2 pounds boneless, skinless chicken thighs
1/2 cup honey
1/4 cup soy sauce
4 cloves garlic, minced
1 tablespoon fresh ginger, grated
2 tablespoons rice vinegar or apple cider vinegar
1/4 teaspoon black pepper
1/4 teaspoon red pepper flakes (optional)
2 teaspoons cornstarch
2 tablespoons water
1 tablespoon olive oil
Optional: sliced green onions and sesame seeds for garnish
Cooked rice or noodles, for serving

Instructions

  • Trim excess fat and pat chicken dry.

  • Whisk together honey, soy sauce, garlic, ginger, vinegar, pepper, and red pepper flakes.

  • Place chicken in slow cooker and pour sauce over it.

  • Cook on low 4–5 hours or high 2–3 hours until chicken reaches 165°F.

  • Mix cornstarch with water, stir into slow cooker, cook 10–15 minutes until sauce thickens.

  • Garnish with green onions and sesame seeds, serve over rice or noodles.

Notes

: Optional vegetables can be added in the last hour; use tamari for gluten-free; searing chicken before cooking enhances flavor.
