These Christmas Rice Crispy Treats are soft, chewy, and loaded with festive flair — perfect for holiday parties, edible gifts, or a no-bake family dessert.
6 cups rice cereal
10 oz mini marshmallows (plus 1 cup reserved)
6 tbsp unsalted butter
1 tsp vanilla extract (optional)
½ cup holiday sprinkles or mini M&Ms
½ cup white chocolate, melted (optional, for drizzling)
Red or green food coloring (optional)
Line a 9×13-inch pan with parchment and lightly grease.
Melt butter in a large saucepan over low heat.
Add marshmallows and stir until melted and smooth.
Remove from heat and stir in vanilla extract.
Add rice cereal and reserved marshmallows. Mix well.
Let cool slightly, then fold in sprinkles or M&Ms.
Press mixture gently into prepared pan.
Drizzle with white chocolate and decorate as desired.
Let set at room temp for 1 hour before cutting.
