A fresh, light, and easy-to-make salad featuring cucumbers, tomatoes, mozzarella, and basil with a balsamic glaze.

Ingredients

2 English cucumbers or 3 small Persian cucumbers, thinly sliced
2 cups cherry tomatoes, halved or 2 large ripe tomatoes, sliced
8 ounces fresh mozzarella, sliced or torn into bite-sized pieces
1/2 cup fresh basil leaves
2 tablespoons olive oil
1–2 tablespoons balsamic glaze
Salt, to taste
Black pepper, to taste
Optional: 1 teaspoon red wine vinegar

Instructions

  • Slice cucumbers and tomatoes; prepare mozzarella.

  • Arrange cucumber slices on a platter, layer with tomatoes and mozzarella.

  • Scatter basil leaves on top.

  • Drizzle olive oil and balsamic glaze. Add optional vinegar.

  • Season with salt and pepper. Serve immediately or chill briefly.

Notes

Add nuts or avocado for texture; prepare dressing just before serving to avoid sogginess.
