A fresh, light, and easy-to-make salad featuring cucumbers, tomatoes, mozzarella, and basil with a balsamic glaze.
2 English cucumbers or 3 small Persian cucumbers, thinly sliced
2 cups cherry tomatoes, halved or 2 large ripe tomatoes, sliced
8 ounces fresh mozzarella, sliced or torn into bite-sized pieces
1/2 cup fresh basil leaves
2 tablespoons olive oil
1–2 tablespoons balsamic glaze
Salt, to taste
Black pepper, to taste
Optional: 1 teaspoon red wine vinegar
Slice cucumbers and tomatoes; prepare mozzarella.
Arrange cucumber slices on a platter, layer with tomatoes and mozzarella.
Scatter basil leaves on top.
Drizzle olive oil and balsamic glaze. Add optional vinegar.
Season with salt and pepper. Serve immediately or chill briefly.
Add nuts or avocado for texture; prepare dressing just before serving to avoid sogginess.
