1 cup shelled pistachios
1 cup pitted Medjool dates
1/2 cup rolled oats
2 tablespoons almond or cashew butter
1 teaspoon vanilla extract
1/8 teaspoon sea salt
1 to 2 teaspoons water if needed
Pulse pistachios and oats in a food processor until finely chopped.
Add dates, nut butter, vanilla, and salt. Blend until mixture clumps together.
Add small amounts of water if needed to help bind.
Roll mixture into tablespoon-sized balls.
Chill for at least 30 minutes before serving.
