2 cups chocolate cookie crumbs
6 tbsp unsalted butter, melted
8 oz dark chocolate, melted and cooled
16 oz cream cheese, room temp
½ cup powdered sugar
1 tsp vanilla extract
1 cup heavy cream, whipped to soft peaks
Optional: ½ tsp instant espresso powder
Mix cookie crumbs and butter. Press into 9-inch springform pan. Chill 30 minutes.
Melt chocolate and let cool.
Beat cream cheese, powdered sugar, vanilla, and espresso powder until smooth.
Add melted chocolate. Mix well.
Fold in whipped cream gently until fully combined.
Pour over crust. Smooth top.
