Fudgy no-bake brownies made with dates, nuts, and cocoa — naturally sweetened, vegan, and gluten-free.

Ingredients

Brownie Base:

  • 1 cup walnuts or almonds

  • 1½ cups pitted medjool dates

  • ½ cup unsweetened cocoa powder

  • 1 tsp vanilla extract

  • Pinch of sea salt

  • 12 tsp water or maple syrup (as needed)

Optional Frosting:

  • 2 tbsp almond or peanut butter

  • 1 tbsp cocoa powder

  • 1 tbsp maple syrup

  • 1 tbsp melted coconut oil

Instructions

  • Line an 8×8-inch pan with parchment.

  • Pulse nuts in food processor until finely ground.

  • Add dates, cocoa, vanilla, salt. Process until sticky and clumping.

  • Press mixture into pan firmly and evenly.

  • For frosting, mix all ingredients and spread over base.

  • Chill 1 hour or until firm. Slice and serve.

Notes

Use different nuts or seeds for variety. Store in fridge or freezer. Add chocolate chips or top with sea salt for extra flavor.
