4 large flour tortillas
1 tablespoon olive oil plus more for brushing
2 cups fresh baby spinach
½ small red onion thinly sliced
1 cup shredded mozzarella cheese
½ cup crumbled feta cheese
½ teaspoon dried oregano

Instructions

  • Heat olive oil in a skillet and sauté red onion until softened.

  • Wilt spinach in the same skillet and remove excess moisture.

  • Layer mozzarella, spinach, onion, and feta on half of each tortilla.

  • Sprinkle with oregano and fold tortillas in half.

  • Cook in a lightly oiled skillet 2 to 3 minutes per side until golden and cheese melts.

  • Rest briefly, slice, and serve warm.

Notes

Drain spinach well to avoid sogginess. Add grilled chicken or chickpeas for extra protein if desired.
