4 large flour tortillas
1 tablespoon olive oil plus more for brushing
2 cups fresh baby spinach
½ small red onion thinly sliced
1 cup shredded mozzarella cheese
½ cup crumbled feta cheese
½ teaspoon dried oregano
Heat olive oil in a skillet and sauté red onion until softened.
Wilt spinach in the same skillet and remove excess moisture.
Layer mozzarella, spinach, onion, and feta on half of each tortilla.
Sprinkle with oregano and fold tortillas in half.
Cook in a lightly oiled skillet 2 to 3 minutes per side until golden and cheese melts.
