Mediterranean Chicken Pasta Salad is a fresh and hearty dish made with tender chicken, pasta, crisp vegetables, feta cheese, and a lemon oregano dressing.
12 ounces rotini or penne pasta
2 cups cooked chicken breast diced
1 cup cherry tomatoes halved
1 English cucumber diced
½ small red onion thinly sliced
½ cup kalamata olives sliced
¾ cup crumbled feta cheese
⅓ cup extra virgin olive oil
3 tablespoons fresh lemon juice
1 tablespoon red wine vinegar
2 cloves garlic minced
1 teaspoon dried oregano
½ teaspoon salt
¼ teaspoon black pepper
2 tablespoons chopped fresh parsley
Cook pasta in salted water until al dente. Drain and cool completely.
Prepare and cook chicken if needed, then dice into bite-sized pieces.
Combine pasta, chicken, tomatoes, cucumber, red onion, and olives in a large bowl.
Whisk olive oil, lemon juice, vinegar, garlic, oregano, salt, and pepper.
Pour dressing over salad and toss gently.
Fold in feta and parsley.
Chill at least 30 minutes before serving.
Store in an airtight container up to 4 days. Add a splash of olive oil or lemon juice before serving if needed.
