Mediterranean Chicken Pasta Salad is a fresh and hearty dish made with tender chicken, pasta, crisp vegetables, feta cheese, and a lemon oregano dressing.

Ingredients

12 ounces rotini or penne pasta
2 cups cooked chicken breast diced
1 cup cherry tomatoes halved
1 English cucumber diced
½ small red onion thinly sliced
½ cup kalamata olives sliced
¾ cup crumbled feta cheese
⅓ cup extra virgin olive oil
3 tablespoons fresh lemon juice
1 tablespoon red wine vinegar
2 cloves garlic minced
1 teaspoon dried oregano
½ teaspoon salt
¼ teaspoon black pepper
2 tablespoons chopped fresh parsley

Instructions

  • Cook pasta in salted water until al dente. Drain and cool completely.

  • Prepare and cook chicken if needed, then dice into bite-sized pieces.

  • Combine pasta, chicken, tomatoes, cucumber, red onion, and olives in a large bowl.

  • Whisk olive oil, lemon juice, vinegar, garlic, oregano, salt, and pepper.

  • Pour dressing over salad and toss gently.

  • Fold in feta and parsley.

  • Chill at least 30 minutes before serving.

Notes

Store in an airtight container up to 4 days. Add a splash of olive oil or lemon juice before serving if needed.
