A soft coffee-flavored cake with milk and vanilla notes, inspired by café-style lattes.
1 ¾ cups all-purpose flour
2 tsp baking powder
½ tsp salt
½ cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 tsp vanilla extract
¾ cup brewed coffee, cooled
½ cup whole milk
Preheat oven to 350°F (175°C) and prepare an 8-inch round pan.
Whisk flour, baking powder, and salt together.
Cream butter and sugar until light and fluffy.
Add eggs one at a time, then mix in vanilla.
Stir in cooled coffee.
Add dry ingredients alternately with milk.
Pour into pan and bake 35–40 minutes.
Cool before slicing or glazing.
Add a light coffee glaze or serve plain. Store wrapped at room temperature for up to three days.
