A slow-cooked lemon herb chicken and rice dish with tender chicken, fluffy rice, and bright citrus flavor.

Ingredients

2 pounds boneless skinless chicken thighs
1 1/2 cups long-grain white rice
3 cups chicken broth
1 medium onion, chopped
4 cloves garlic, minced
1/4 cup lemon juice
1 tablespoon lemon zest
1 teaspoon dried thyme
1 teaspoon dried oregano
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons chopped parsley

Instructions

  • Add onion and garlic to slow cooker.
  • Place chicken and seasonings inside.
  • Pour in broth, lemon juice, and zest.
  • Cook on low 4–5 hours.
  • Shred chicken and return to pot.
  • Stir in rice and cook 45–60 minutes.
  • Finish with parsley and serve.

Notes

Adjust liquid for rice type, add vegetables if desired, use chicken thighs for best tenderness
