2 large cucumbers, spiral cut
1 tablespoon rice vinegar
1 tablespoon soy sauce
1 teaspoon sesame oil
1 clove garlic, grated
1 teaspoon chili flakes
1 teaspoon maple syrup
1 tablespoon cilantro, chopped
1 teaspoon sesame seeds
1/2 teaspoon salt
1/4 teaspoon black pepper

Instructions

  • Spiral cut cucumbers and place in a bowl.
  • Salt lightly and let rest for 10 minutes, then drain.
  • Mix vinegar, soy sauce, sesame oil, garlic, chili, maple syrup, and pepper.
  • Pour dressing over cucumbers and toss gently.
  • Rest for a few minutes.
  • Top with cilantro and sesame seeds before serving.
