2 cups mashed floury potatoes, cooled
1/2 cup all-purpose flour, plus extra for dusting
1/2 teaspoon salt
1 tablespoon butter, melted (optional)
2 tablespoons butter for frying

Instructions

  • Place cooled mashed potatoes in a bowl.

  • Add salt and flour gradually, mixing into a soft dough.

  • Stir in melted butter if using.

  • Turn dough onto a floured surface and shape into a 1/2 inch thick round.

  • Cut into four equal wedges.

  • Heat a skillet over medium heat and melt butter.

  • Cook each wedge for 4 to 5 minutes per side until golden.

  • Serve warm.
