2 cups mashed floury potatoes, cooled
1/2 cup all-purpose flour, plus extra for dusting
1/2 teaspoon salt
1 tablespoon butter, melted (optional)
2 tablespoons butter for frying
Place cooled mashed potatoes in a bowl.
Add salt and flour gradually, mixing into a soft dough.
Stir in melted butter if using.
Turn dough onto a floured surface and shape into a 1/2 inch thick round.
Cut into four equal wedges.
Heat a skillet over medium heat and melt butter.
Cook each wedge for 4 to 5 minutes per side until golden.
Serve warm.
Use dry mashed potatoes for best texture.
