A quick, no-bake sweet-and-salty snack made with peanut butter, oat flour, and mini pretzels. Optional dark chocolate dip makes these bites an irresistible treat.
1/2 cup natural peanut butter
1–2 tbsp maple syrup or honey
1/4 cup oat flour (plus more as needed)
1/2 tsp vanilla extract (optional)
40 mini pretzels (for 20 bites)
1/2 cup dark chocolate (optional)
1 tsp coconut oil (optional)
Mix peanut butter, maple syrup, vanilla, and oat flour into a thick dough.
Scoop 1 tsp portions and roll into balls.
Sandwich each ball between two pretzels and press gently.
Freeze bites for 20–30 minutes.
Melt chocolate and coconut oil, then dip or drizzle over bites (optional).
Return to freezer until set. Store in fridge or freezer.
Use sunflower seed butter for a nut-free version.
Add protein powder for a post-workout snack.
Store up to 1 week refrigerated or 1 month frozen.
