2 cups Medjool dates, pitted
1 cup raw walnuts
1/2 cup unsweetened cocoa powder
1 tsp vanilla extract
1/4 tsp salt
If dates are dry, soak in warm water for 10 minutes and drain.
In a food processor, pulse walnuts until finely ground.
Add dates and blend until mixture sticks together.
Add cocoa powder, vanilla, and salt. Blend until smooth and dough-like.
Line an 8×8-inch pan with parchment paper. Press mixture evenly into the pan.
Chill in fridge for at least 1 hour.
Slice into squares and serve.
Store leftovers in the fridge or freezer.
