Whimsical mini cheesecakes inspired by the Grinch — bright green filling, buttery crust, and a red heart on top. Perfect for Christmas parties and dessert trays.
Crust:
¾ cup graham cracker crumbs
1½ tbsp granulated sugar
3 tbsp melted unsalted butter
Filling:
8 oz cream cheese, softened
¼ cup granulated sugar
1 large egg
1 tsp vanilla extract
2 tbsp sour cream
Green gel food coloring
Toppings:
Whipped cream (optional)
Red heart sprinkle or candy
Preheat oven to 325°F. Line a mini muffin tin with 24 liners and spray lightly.
Mix crust ingredients and press ~1 tsp into each liner. Bake 5 minutes; cool slightly.
Beat cream cheese and sugar until smooth. Add egg, vanilla, and sour cream. Mix well.
Add green gel coloring until bright. Fill liners with about 1 tbsp batter.
Bake 14–16 minutes until just set. Cool, then chill 2+ hours.
Top with whipped cream and red heart sprinkle before serving.
Store in fridge up to 5 days. Freeze undecorated if needed. Use festive liners for extra holiday flair.
