1 pound large shrimp, peeled and deveined, tails on
2 tablespoons olive oil
2 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
1 ripe mango, peeled and chopped
2 tablespoons fresh lime juice
1 teaspoon red chili flakes
1 teaspoon honey or agave
1 tablespoon fresh cilantro or mint (optional)
Blend mango, lime juice, chili flakes, and honey until smooth to make the coulis.
Preheat grill or grill pan to medium-high heat.
Toss shrimp with olive oil, garlic, salt, and black pepper.
Thread shrimp onto skewers or place on grill pan.
