Adorable and festive no-bake Gnome Mini Cheesecakes made with a graham cracker crust, creamy vanilla cheesecake filling, and fresh strawberry “hats.” A fun and easy holiday dessert for all ages.
1 cup graham cracker crumbs
¼ cup unsalted butter, melted
8 oz cream cheese, softened
½ cup powdered sugar
1 tsp vanilla extract
¾ cup heavy cream, whipped
12–14 fresh strawberries
Whipped cream, for decorating
Line mini cupcake tin with liners or use silicone molds.
Mix graham cracker crumbs with melted butter. Press into each liner. Chill.
Beat cream cheese, powdered sugar, and vanilla until smooth.
Whip cream to stiff peaks. Fold into cream cheese mixture.
Spoon or pipe filling over crusts. Smooth tops. Chill 2–3 hours.
Top each cheesecake with a strawberry (pointed side up).
Pipe whipped cream around base and top of strawberry for gnome hat effect.
Serve chilled.
Best made ahead and decorated before serving. Keep refrigerated until ready.
