These adorable no-bake Gnome Mini Cheesecakes feature a buttery crust, creamy vanilla filling, and festive strawberry gnome toppers. A whimsical, crowd-pleasing holiday dessert perfect for Christmas parties and edible gifting.
1½ cups graham cracker crumbs
5 tbsp unsalted butter, melted
16 oz cream cheese, softened
¾ cup powdered sugar
1½ tsp vanilla extract
¾ cup heavy cream
12–14 fresh strawberries, hulled
6–7 mini marshmallows, halved
Whipped cream or frosting, for decoration
Mix graham cracker crumbs with melted butter. Press into lined muffin tins. Chill.
Beat cream cheese, powdered sugar, and vanilla until smooth.
Whip heavy cream to soft peaks. Fold into cream cheese mixture.
Fill each crust with cheesecake filling. Smooth tops. Chill at least 4 hours.
Top with strawberries (pointed side up). Pipe whipped cream for beard and hat trim. Add half a mini marshmallow as nose.
Chill before decorating for best structure.
Use piping bags for neat decorating.
Decorate just before serving.
