pound fresh carrots, peeled and sliced into 1/2-inch rounds; 1/4 cup pure maple syrup; 1/4 cup brown sugar, packed; 3 tablespoons unsalted butter, cut into small pieces; 1/2 teaspoon salt; 1/4 teaspoon freshly ground black pepper; 1/2 teaspoon cinnamon (optional); 1/4 teaspoon nutmeg (optional); 1 teaspoon fresh thyme leaves (optional); 1 tablespoon water (if needed to loosen glaze)
1. Peel and slice carrots into 1/2-inch rounds. 2. In a bowl, combine maple syrup, brown sugar, and butter; stir until smooth. 3. Pour glaze over carrots in slow cooker, add optional spices/herbs. 4. Cook on low 2–3 hours, check tenderness at 2 hours. 5. Gently stir carrots in glaze; add water if too thick. 6. Serve immediately, drizzling remaining glaze over top.
