A bright, sweet one-bowl lemon dessert with a soft, chewy texture and optional tangy glaze. Easy to make, quick to clean up, and full of fresh citrus flavor.

Ingredients

1/2 cup unsalted butter, melted
3/4 cup granulated sugar
2 large eggs
2 tbsp fresh lemon juice
1 tbsp lemon zest
1 tsp vanilla extract
1 cup all-purpose flour
1/4 tsp salt

Optional Glaze:
1/2 cup powdered sugar
1–2 tbsp lemon juice

Instructions

  • Preheat oven to 350°F (175°C). Grease and line an 8×8-inch baking pan.

  • In a bowl, whisk melted butter and sugar. Add eggs, lemon juice, zest, and vanilla. Mix until smooth.

  • Stir in flour and salt until just combined.

  • Spread batter into pan. Bake 22–26 minutes until golden at the edges.

  • Cool completely. Mix glaze ingredients and drizzle over top. Let set before slicing.

Notes

Use fresh lemons for best flavor. Store at room temp or refrigerate for up to 5 days. Freezes well.
