1/2 cup unsalted butter, melted
3/4 cup granulated sugar
2 large eggs
2 tbsp fresh lemon juice
1 tbsp lemon zest
1 tsp vanilla extract
1 cup all-purpose flour
1/4 tsp salt
Optional Glaze:
1/2 cup powdered sugar
1–2 tbsp lemon juice
Preheat oven to 350°F (175°C). Grease and line an 8×8-inch baking pan.
In a bowl, whisk melted butter and sugar. Add eggs, lemon juice, zest, and vanilla. Mix until smooth.
Stir in flour and salt until just combined.
Spread batter into pan. Bake 22–26 minutes until golden at the edges.
Cool completely. Mix glaze ingredients and drizzle over top. Let set before slicing.
Use fresh lemons for best flavor. Store at room temp or refrigerate for up to 5 days. Freezes well.
