2 cups fresh or frozen corn kernels
1 red bell pepper, diced
1/4 cup red onion, finely chopped
1 jalapeño pepper, finely chopped
1/4 cup fresh cilantro, chopped
2 tablespoons lime juice
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
Place corn kernels in a large mixing bowl.
Add diced red bell pepper, red onion, and jalapeño.
Stir in chopped cilantro.
Pour lime juice and olive oil over the mixture.
Season with salt and black pepper.
