These Easy Cinnamon Sugar Blondies are soft, chewy, and full of warm cinnamon flavor with a crackly sugar crust. A simple one-bowl recipe perfect for fall snacking or cozy gatherings.
Blondies:
½ cup unsalted butter, melted
1 cup brown sugar
1 egg
1 tsp vanilla extract
1 cup all-purpose flour
1½ tsp cinnamon
¼ tsp salt
Topping:
2 tbsp granulated sugar
1 tsp cinnamon
Preheat oven to 350°F. Line an 8×8-inch pan with parchment.
Mix melted butter and brown sugar. Add egg and vanilla.
Stir in flour, cinnamon, and salt until just combined.
Spread batter in pan. Mix cinnamon and sugar and sprinkle on top.
Bake 22–26 mins until golden and just set. Cool completely. Slice and serve.
Store in an airtight container for up to 4 days. For a fun twist, swirl in caramel or add white chocolate chips.
