Easy Cucumber Caprese Salad is a light and refreshing dish made with crisp cucumbers, ripe tomatoes, fresh mozzarella, basil, olive oil, and balsamic glaze.
2 English cucumbers sliced into ¼ inch rounds
2 cups cherry or grape tomatoes halved
8 ounces fresh mozzarella pearls or sliced mozzarella
½ cup fresh basil leaves torn
2 tablespoons extra virgin olive oil
1 to 2 tablespoons balsamic glaze
½ teaspoon flaky sea salt or to taste
¼ teaspoon freshly cracked black pepper
Wash and dry cucumbers and tomatoes.
Slice cucumbers and halve tomatoes if needed.
Arrange cucumbers, tomatoes, and mozzarella in a bowl or on a platter.
Scatter torn basil over the top.
Drizzle with olive oil and balsamic glaze.
Season with salt and black pepper.
Serve immediately or chill up to 30 minutes before serving.
