Fresh, crisp, and easy to make, Easy Cucumber Caprese Salad combines cucumber, tomato, mozzarella, and basil for a vibrant summer dish.
1 large English cucumber, thinly sliced
1 cup cherry tomatoes, halved
8 ounces fresh mozzarella, sliced or torn into bite-sized pieces
1/2 cup fresh basil leaves
3 tablespoons extra-virgin olive oil
1 1/2 tablespoons balsamic vinegar
1/4 teaspoon sea salt
1/4 teaspoon freshly cracked black pepper
Optional: 1 teaspoon lemon juice
Optional: 2 tablespoons toasted pine nuts
Wash and slice cucumber thinly. Halve tomatoes and pat dry.
Tear or slice mozzarella; pat dry.
Wash and pat dry basil, tear larger leaves.
Layer cucumber, tomatoes, and mozzarella on a serving platter.
Drizzle olive oil and balsamic vinegar evenly.
Sprinkle salt and pepper; add lemon juice if desired.
Optional: sprinkle toasted pine nuts.
Toss gently and serve immediately or chill briefly before serving.
