Fresh, crisp, and easy to make, Easy Cucumber Caprese Salad combines cucumber, tomato, mozzarella, and basil for a vibrant summer dish.

Ingredients

1 large English cucumber, thinly sliced
1 cup cherry tomatoes, halved
8 ounces fresh mozzarella, sliced or torn into bite-sized pieces
1/2 cup fresh basil leaves
3 tablespoons extra-virgin olive oil
1 1/2 tablespoons balsamic vinegar
1/4 teaspoon sea salt
1/4 teaspoon freshly cracked black pepper
Optional: 1 teaspoon lemon juice
Optional: 2 tablespoons toasted pine nuts

Instructions

  • Wash and slice cucumber thinly. Halve tomatoes and pat dry.

  • Tear or slice mozzarella; pat dry.

  • Wash and pat dry basil, tear larger leaves.

  • Layer cucumber, tomatoes, and mozzarella on a serving platter.

  • Drizzle olive oil and balsamic vinegar evenly.

  • Sprinkle salt and pepper; add lemon juice if desired.

  • Optional: sprinkle toasted pine nuts.

  • Toss gently and serve immediately or chill briefly before serving.

Notes

Use fresh, ripe tomatoes and mozzarella for best flavor. Assemble just before serving to prevent sogginess.
