2 pounds beef sirloin tips or chuck roast cut into 1 to inch cubes
4 tablespoons unsalted butter melted
4 cloves garlic minced
1 cup low sodium beef broth
1 tablespoon Worcestershire sauce
1 teaspoon dried thyme
1 teaspoon dried parsley
1 teaspoon salt
½ teaspoon black pepper
Fresh chopped parsley for garnish

Instructions

  • Trim and cube beef into evenly sized pieces.

  • Optional: Sear beef in a hot skillet 2 to 3 minutes per side.

  • Place beef in slow cooker.

  • Mix melted butter, garlic, Worcestershire sauce, thyme, parsley, salt, and pepper.

  • Pour mixture and beef broth over beef and stir gently.

  • Cover and cook on low 6 to 8 hours or high 3 to 4 hours until tender.

  • Thicken sauce if desired and garnish with parsley before serving.

Notes

Use lean sirloin for a lighter option or chuck for extra tenderness. Store leftovers up to 4 days in the refrigerator or freeze up to 3 months.
