2 medium sweet potatoes, peeled and shredded
1/4 cup onion, finely grated
2 tablespoons olive oil or avocado oil
1/4 teaspoon garlic powder
1/2 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons fresh parsley, chopped (optional)
Can add other vegetables, bake instead of pan-frying, or freeze for later use.
