A fresh, crisp salad with cucumbers, mozzarella, and herbs, dressed lightly with olive oil and lemon juice.

Ingredients

2 English cucumbers or 3 small Persian cucumbers, thinly sliced
8 ounces fresh mozzarella, sliced or torn into bite-sized pieces
1 cup cherry or grape tomatoes, halved (optional)
1/4 cup fresh basil leaves
2 tablespoons olive oil
1 tablespoon fresh lemon juice
Salt, to taste
Black pepper, to taste
Optional: 1 teaspoon balsamic glaze

Instructions

  • Slice cucumbers and tomatoes; prepare mozzarella.

  • Arrange cucumbers on a platter, layer with mozzarella and tomatoes.

  • Scatter basil leaves on top.

  • Whisk olive oil, lemon juice, salt, and pepper; drizzle over salad.

  • Add optional balsamic glaze. Serve immediately or chill briefly.
