Creamy tomato basil chicken slow-cooked with tender meat, rich tomato sauce, fresh basil, and Parmesan for a comforting dinner.

Ingredients

2 pounds boneless chicken breasts or thighs
1 tablespoon olive oil
1 small onion, chopped
4 cloves garlic, minced
1 can tomato sauce (15 ounces)
1 can diced tomatoes (14.5 ounces)
2 tablespoons tomato paste
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon Italian seasoning
1/2 teaspoon dried basil
1/2 cup chicken broth
3/4 cup heavy cream
1/2 cup fresh basil, chopped
1/2 cup Parmesan cheese

Instructions

  • Add olive oil, onion, and garlic to slow cooker.
  • Place chicken on top and season with salt, pepper, and herbs.
  • Mix tomato sauce, diced tomatoes, tomato paste, and broth; pour over chicken.
  • Cook on low 6–7 hours or high 3–4 hours.
  • Shred chicken and return to slow cooker.
  • Stir in cream and cook 15–20 minutes more.
  • Add basil and Parmesan before serving.

Notes

Chicken thighs give richer texture. Add spinach or mushrooms if desired. Adjust thickness by simmering uncovered at end.
